ABSTRACT

Las harinas de trigo, maíz, lentejas y arroz son elementales para la formulación de distintos alimentos de alto consumo en la población chilena. El proceso de extrusión es ampliamente utilizado por la industria alimentaria para generar propiedades que permitan la reconstitución instantánea de harinas. Sin embargo, dicho proceso tecnológico; afecta la cantidad, la estabilidad y la digestibilidad de los hidratos de carbono (CHO) del ingrediente alimentario. Estas propiedades nutricionales impactan directamente en la respuesta glicémica de los individuos y en el índice glicémico (IG) de los alimentos. La presente revisión analiza el efecto de la extrusión sobre las propiedades nutricionales de los CHO de alimentos elaborados a partir de harinas de consumo habitual en Chile. Factores como la temperatura, y en menor grado, la humedad y velocidad utilizadas en el proceso de extrusión, junto con el origen del grano utilizado, determinan las propiedades nutricionales de CHO presente en harinas extruidas. El estudio, control y estandarización de estas variables operacionales permitiría estandarizar la elaboración industrial de productos extruidos, impactando favorablemente; sobre la velocidad de hidrólisis de almidón y el IG de harinas de trigo, maíz, lentejas o arroz; y de alimentos formulados a partir de ellas.


Flours from wheat, corn, lentils, and rice are essential for the formulation of various high-consumption foods in the Chilean population. The extrusion process is widely used by the food industry to generate properties that allow for the instant reconstitution of flours. However, this technological process affects the nutritional properties of the carbohydrates (CHO) in the food ingredient, including quantity, stability, and digestibility; characteristics that directly impact the glycemic response of individuals and the glycemic index of foods. This review analyzes the effect of extrusion on the nutritional properties of CHO in foods made from commonly consumed flours in Chile. Factors such as temperature, and to a lesser extent, humidity, and speed used in the extrusion process, along with the origin of the grain used, determine the healthy properties of CHO in extruded flours. The utility of adjusting the mentioned variables in the extrusion process would allow for the standardization of industrial scaling in the production of extruded foods that would positively impact the starch hydrolysis rate and glycemic index of wheat, corn, lentil, or rice flours, and foods formulated from them.

Os objetivos deste trabalho foram avaliar o efeito da germinação no teor de macronutrientes e da desidratação em compostos bioativos, nutrientes e atividade antioxidante de farinhas das leguminosas Phaseolus lunatus L. e Cajanus cajan (L. Millsp.) germinadas. As condições de germinação foram controladas em laboratório e as amostras foram submetidas à desidratação térmica (55°C) e liofilização. Foram realizadas as análises de composição centesimal, fenólicos totais flavonoides, atividade antioxidante (DPPH, FRAP), perfil de ácidos graxos (CG-FID) e de vitâmeros de tocoferol (HPLC- DAD). A germinação das leguminosas promoveu aumento de proteínas, lipídios e carboidratos. O processamento térmico para desidratação contribuiu para perdas de proteínas, lipídios, cinzas, e maior atividade antioxidantes em ambas as espécies. O perfil de ácidos graxos e vitâmeros de tocoferol mostraram-se com variações que dependem do tipo de leguminosa e condições de processamento, podendo ser positivas ou negativas. Farinhas de leguminosas germinadas pode ser uma alternativa para a inserção na dieta ou em formulações alimentícias e as condições de processamento devem ser monitoradas com intuito de otimiza propriedades nutritivas e funcionais.


The objectives of this work were to evaluate the effect of germination on macronutrient content and dehydration on bioactive compounds, nutrients and antioxidant activity of flours from germinated Phaseolus lunatus L. and Cajanus cajan (L. Millsp.) legumes. The germination conditions were controlled in the laboratory and the samples were submitted to thermal dehydration (55°C) and lyophilization. Analyses were carried out for centesimal composition, total phenolic flavonoids, antioxidant activity (DPPH, FRAP), fatty acid profile (GC-FID) and tocopherol vitamers (HPLC-DAD). Germination of the legumes promoted an increase in proteins, lipids and carbohydrates. Thermal processing for dehydration contributed to losses of proteins, lipids, ash, and higher antioxidant activity in both species. The profile of fatty acids and tocopherol vitamers showed variations that depend on the type of legume and processing conditions, and can be positive or negative. Sprouted legume flours can be an alternative for insertion in the diet or in food formulations and the processing conditions must be monitored in order to optimize nutritional and functional properties.


Los objetivos de este trabajo fueron evaluar el efecto de la germinación sobre el contenido en macronutrientes y de la deshidratación sobre los compuestos bioactivos, los nutrientes y la actividad antioxidante de harinas de leguminosas germinadas de Phaseolus lunatus L. y Cajanus cajan (L. Millsp.). Las condiciones de germinación se controlaron en el laboratorio y las muestras se sometieron a deshidratación térmica (55°C) y liofilización. Se realizaron análisis de composición centesimal, flavonoides fenólicos totales, actividad antioxidante (DPPH, FRAP), perfil de ácidos grasos (GC-FID) y vitaminas tocoferol (HPLC-DAD). La germinación de las leguminosas promovió un aumento de proteínas, lípidos y carbohidratos. El procesado térmico para la deshidratación contribuyó a pérdidas de proteínas, lípidos, cenizas y a una mayor actividad antioxidante en ambas especies. El perfil de ácidos grasos y vitaminas tocoferol mostró variaciones que dependen del tipo de legumbre y de las condiciones de procesado, pudiendo ser positivas o negativas. Las harinas de leguminosas germinadas pueden ser una alternativa para su inserción en la dieta o en formulaciones alimentarias y las condiciones de procesado deben ser monitorizadas para optimizar las propiedades nutricionales y funcionales.

ABSTRACT

The need to improve and enhance the nutritional quality of locally made foods (bakery and confectionaries) cannot be overemphasized. This study set out to meet this need by producing composite flours from wheat, defatted peanut and orange peel flour blends which will serve an even greater issue of reducing the cost of wheat importation and use. The samples were coded as follows: A-100:0:0, B-90:5:5, C-85:10:5, D-80:15:5, E-75:20:5 of wheat flour: Defatted peanut flour: orange peel flour. The flours produced were analyzed for functional, anti-nutrient, proximate, minerals, and phytochemical properties. The functional properties of flours; bulk density, swelling capacity, OAC, WAC, and Foaming capacity ranged from 0.43 to 0.93 g/ml, 0.89 to 5.67%, 0.47 to 2.55 g/L, 1.75 to 4.35ml/g, 0.52 to 10.56% respectively. The anti-nutritional properties: phytates, tannins, and trypsin inhibitor content of flours ranged from 0.0352 to 0.0845%, 0.040 to 0.600%, and 0.011 to 0.048mg/g respectively. The proximate composition of the flour samples, Moisture, Protein, fats, crude fibre, ash, carbohydrates, and energy values ranged from 5.58 to 9.55%, 6.33 to 15.64%, 1.06 to 3.51%, 0.24 to 4.07%, 1.42 to 2.65%, 85.37 to 64.58% and 376.34 to 352.47kcal/100g respectively. The mineral composition in the samples ranged from 232.05 to 394.62mg/100g for Ca, 76.09 to 122.27mg/100g for Mg, 6.71 to 29.42 mg/100g for Fe, 108.78 to 256.47mg/100g for K, 10.09 to 25.75 mg/100g for Zn. The phytochemical composition of the samples was as follows; 0.067-0.153%, for saponins; 0.043-1.457%, for alkaloids; 1.03-13.77mgGAE/g, for Total phenolics; 3.07-29.31mg/QE, for Total Flavonoids respectively. The composite flour herein produced demonstrates great potential for its use in the development of functional foods given its great nutrients and improved functional characteristics. However sample E with 75%wheat: 20%DPF: 5%OPF surpassed all other samples in terms of the quality attributes and therefore was the best of the formulations.

@#Introduction: Boba milk tea, also recognised as bubble tea, is a popular beverage in Asia. The primary component in bubble tea is “boba” or “pearl” balls, made of tapioca starch. However, much remains to be seen if tapioca boba pearls have a profound impact on blood glucose. Methods: In a randomised, controlled crossover, single-blinded design study, 12 healthy Chinese male adults (body mass index 21±14 kgm−2) attended four sessions. At each session, bubble tea consisting of boba pearls made from tapioca starch (TS), sago starch (SS), high-amylose starch + sago starch (HA), or kithul flour + sago starch (KF) were served. Boba milk tea was served at breakfast, with volunteers consuming them in a fasted state at each session. The postprandial glycaemic response and insulin response were compared within participants. Results: There were observed differences at time 180min for incremental glucose between HA and SS (p=0.005), and for TS and SS for incremental insulin (p=0.004). Glucose iAUC was lower for TS compared to the other boba pearl treatments, although not significantly (p=0.093). There was no significant difference in iAUC of insulin (p=0.104) between the four boba pearl milk teas. Conclusion: With limited scientific research conducted on bubble milk tea, our study was the first to document the glycaemic responses of tapioca starch boba pearls and boba pearls made using unconventional flours and starches. The findings from this study is an important first step for future work to develop healthier boba pearls for bubble tea.

Resumen Introducción: los lupinos son legumbres fuente de nutrientes y fitoquímicos con propiedades beneficiosas para la salud. Sin embargo, presentan alcaloides que deben ser eliminados previos al consumo. El objetivo del estudio fue obtener y caracterizar harinas de lupino blanco y andino, aptas para el consumo. Materiales y método: los granos se desamargaron por método acuoso tradicional que incluyó remojo por 18 horas, cocción por 1 hora y lavado por 5 días. Luego, se secaron en estufa, se molieron y tamizaron. Se determinó alcaloides, proteínas, grasas, fibra dietaria total, sodio, fósforo, color, índice de absorción y solubilidad en agua, polifenoles totales, flavonoides, carotenoides y perfil de fenoles en semillas crudas y harinas tratadas. Resultados: el contenido de alcaloides en las harinas tratadas se encontró entre los límites establecidos para la ingesta segura (<0,07 g/100g). Las proteínas se encontraron entre 25-39 g/100g, grasas entre 12-23 g/100g, fibra dietaria total 35-50 g/100g y cenizas 1,5-3,3 g/100g. El calcio se encontró entre 210-323 mg/100g, fósforo 140-202 mg/100g y sodio 38-44 mg/100g. El color correspondió al amarillo con tendencia al rojo. La harina de lupino andino tratada presentó mayor índice de absorción de agua (7,8 g/g) y solubilidad en agua (78,8%). Los productos tratados presentaron polifenoles (13,4 y 20,8 mg/100g), flavonoides (27,5 y 8,7 mg/100g) y carotenoides (0,3 y 0,9 mg/100g). El perfil de fenoles correspondió a 3 flavonas y 3 isoflavonas en lupino blanco. En el lupino andino, se detectaron 5 flavonas y 3 isoflavonas. Conclusiones. Las harinas tratadas presentan características físico-químicas y funcionales que podrían representar ingredientes alternativos a las tradicionales como trigo y soja, para la formulación de alimentos saludables.


Abstract Introduction: lupins are legumes that are a source of nutrients and phytochemicals with beneficial properties for health. However, they present alkaloids that must be eliminated prior to consumption. The objective of the work was to obtain and characterize White and Andean lupine flours suitable for consumption. Materials and method: the grains were debittered using traditional aqueous method that included soaking for 18 hours, cooking for 1 hour and washing for 5 days. Then, they were dried in an oven, ground and sieved. Alkaloids, proteins, fats, total dietary fiber, sodium, phosphorus, color, absorption rate and water solubility, total polyphenols, flavonoids, carotenoids and phenol profile in raw seeds and treated flours were determined. Results: the alkaloid contents of treated flours were within the limits established for safe intake (less than 0.07 g/100g). Proteins were found between 25-39 g/100g, fats between 12-23 g/100g, total dietary fiber 35-50 g/100g and ash 1.5-3.3 g/100g. Calcium was found between 210-323 mg/100g, phosphorus 140-202 mg/100g and sodium 38-44 mg/100g. The color corresponded to yellow with a tendency to red. The treated Andean lupine flour presented a higher rate of water absorption (7.8 g/g) and solubility in water (78.8%). The treated products presented polyphenols (13.4 and 20.8 mg/100g), flavonoids (27.5 and 8.7 mg/100g) and carotenoids (0.3 and 0.9 mg/100g). The phenolic profile corresponded to 3 flavones and 3 isoflavones in white lupine. In Andean lupine, 5 flavones and 3 isoflavones were detected. Conclusion: the treated flours could represent alternative ingredients to the traditional ones such as wheat and soy for the formulation of healthy foods.

RESUMEN Con la finalidad de diversificar el uso de las harinas de plátano pelipita (Musa ABB) y batata (Ipomoea batatas), se propuso evaluar la funcionalidad de una galleta sustituyendo la harina de trigo con 70% de harina de plátano pelipita y 30% harina de batata con el fin de obtener un producto con propiedades físicas y organolépticas agradables, además de mejorar la calidad nutricional, en cuanto a fibra dietaría y almidones resistentes. Las galletas elaboradas a base de harina de plátano pelipita y batata incrementaron significativamente, con respecto a la galleta patrón (GP), en los siguientes componentes químicos: ceniza (0,6 a 2,1%), proteínas (de 3,9 a 5,3%), fibra dietaría (4,1 a 5,3%) y azucares totales (24,1 a 22,1%). La galleta de harina de plátano y batata cumple con los requerimientos establecidos en la industria en cuanto a humedad (3,3%), aw (0,410) y color (L= 49,3 a= 4,79 y b= 19,3). Los resultados mostraron que la harina compuesta, contribuyó a un ligero incremento en las fracciones de fibra, proteínas, ceniza, fósforo, calcio y hierro en las galletas. En conclusión, el uso de la harina de batata y plátano en una relación de 30% - 70% respectivamente, resultó un ingrediente adecuado en la elaboración de galletas con alta preferencia sensorial, constituyendo una alternativa como fuente de fibra dietética.


ABSTRACT In order to diversify the use of Pelipita banana (Musa ABB) and sweet potato (Ipomoea batatas) flours, we proposed evaluating the functionality of a cookie replacing wheat flour with 70% Pelipita banana flour and 30% sweet potato flour in order to obtain a product with pleasant organoleptic and physical properties and improved nutritional quality, in terms of dietary fiber and resistant starch. Cookies prepared from Pelipita banana and sweet potato flours increased significantly with respect to the following chemical components: ash (from 0.6 to 2.1%), protein (3.9 to 5.3%), dietary fiber (4.1 to 5.3%) and total sugars (24.1 to 22.1%). Cookies made with banana and sweet potato flour met the requirements established in the industry in terms of moisture (3.3%), aw (0.410) and color (L= 49.3 a= 4.79 and b= 19.3). The results showed that the composite flour, contributed to a slight increase in fractions of fiber, protein, ash, phosphorus, calcium and iron in cookies. In conclusion, the use of sweet potato and banana flours in a ratio of 30%-70% respectively, was a suitable ingredient in the production of biscuits with high sensory preference, constituting an alternative source of dietary fiber.

ABSTRACT

The functional, physicochemical and sensory evaluation of bread from wheat and garden peas flours were investigated. Five (5) bread samples were produced from the proportion of wheat and garden pea flours as 90%:10% (B), 80%:20% (C), 70%:30% (D), 60%:40% (E) and 100% wheat was the control sample (A) using standard methods. All the functional parameters differed (p≤0.05) significantly. The moisture, crude protein, crude fat, Ash and crude fiber increased (p≤0.05) significantly while the carbohydrate content decrease (p≤0.05) significantly with corresponding increase in the percentage of the composite flour from 10-40%. The result of the physical properties showed that there was a significant difference in all the physical parameters. Also, sensory results showed that there were significant differences in all the sensory scores. However, consumers preferred the bread from 100% wheat flour and 90% and 10% (Sample B) of wheat and garden peas flours substitution.

RESUMEN Se evaluó químicamente el perfil de aminoácidos y contenido de vitaminas según la metodología oficial, las harinas crudas de batata y tratadas térmicamente por cocción. Se obtuvieron harinas crudas con contenidos de carbohidratos totales de 84,81%, almidón 50,65%, proteínas de 2,94%, contenidos de grasa cruda de 0,34%. Se encontraron diferencias estadísticamente significativas (p≤ 0,05) por efecto de los tratamientos aplicados. Se redujo el contenido de humedad, cenizas, carbohidratos totales y azúcares reductores. Se observó un incremento en el contenido de fibra cruda. Predominaron en todas las harinas los aminoácidos ácido glutámico y ácido aspártico, el aminoácido limitante fue triptófano. Por efecto de los tratamientos aplicados, hubo diferencias (p≤ 0,05) en la composición de la mayoría de los aminoácidos, incrementando su concentración. El contenido de vitaminas A y C disminuyó por efecto de los tratamientos aplicados (p≤ 0,05). Se concluye que las harinas crudas de batata y cocidas pueden ser empleadas en la formulación de alimentos ya que aportan buenas cantidades de nutrientes.


ABSTRACT The chemical composition, amino acid profile and vitamin content of sweet potato flour (raw and heat treated by cooking) were evaluated according to official methodology. Crude flours with total carbohydrate content of 84.81%, starch 50.65%, proteins 2.94% and crude fat contents 0.34% were used. Statistically significant differences were found (p≤ 0.05) due to the effect of the applied treatments. The content of humidity, ash, total carbohydrates and reducing sugars were reduced and an increase in crude fiber content was observed. The amino acids glutamic acid and aspartic acid predominated in all flours. We observed low levels of the amino acid tryptophan. There were statistically significant differences (p≤ 0.05) due to the effect of the treatments applied on the composition of most of the amino acids, increasing their concentration. Vitamin A and C content decreased due to the effect of the applied treatments (p≤ 0.05). Raw and cooked sweet potato flours can be used in food formulation because they provide good amounts of nutrients.

ABSTRACT

El sorgo es un cereal con fuerte potencial alimentario cuyo consumo para uso humano creció recientemente. Es de fácil cultivo, crece en zonas semiáridas (resistencia a sequía y calor) y algunas variedades presentan gran capacidad antioxidante. No contiene gluten y permitiría ampliar el limitado listado de ingredientes de productos para celíacos. En Argentina, harinas de sorgo (HS) se utilizan en productos de consumo general y en libres de gluten. De acuerdo a esto, fue de interés estudiar, la composición y contenido de minerales (Fe, Zn, Ca, Mg, Na y K), de HS granífero blanco que son utilizadas en productos para consumo humano. Las harinas fueron procesadas en la planta semi-industrial de INTI Cereales y Oleaginosas: HS integral extrudida y refinadas (90% de extracción, cruda y extrudida). Se determinó composición centesimal por métodos AOAC y minerales por espectrometría de absorción atómica. Los resultados obtenidos en HS integral extrudida, refinadas cruda y extrudida fueron (g%): humedad 11,0, 12,6 y 9,8; proteínas: 10,2, 8,5 y 8,7; grasas: 2,7, 2,6 y 1,5; fibra dietaria: 13,3, 4,5 y 5,1; cenizas: 1,50, 1,00 y 1,20; carbohidratos: 61,3, 70,8 y 73,7. Respecto a los minerales, los valores fueron (mg%): Fe: 5,9, 1,7 y 2,6; Zn: 2,5, 1,6 y 1,7; Ca: 19,1, 7,5 y 8,8; Mg: 140, 108 y 117; Na: 4,0, 1,1 y 3,6; K: 421, 243 y 305, respectivamente. La refinación produjo disminución de fibra dietaria y minerales. Si bien el Fe disminuyó en HS refinadas, se mantuvieron niveles aceptables y aportarían Fe en productos libres de gluten. Presentaron niveles de Zn y Mg apreciables, mientras que el Ca fue muy bajo como en todos los cereales. Son muy pobres en Na y ricas en K y constituirían una fuente natural de este mineral. En HS refinadas, la extrusión no afectó la composición y contenido mineral.


Sorghum is a cereal with strong food potential whose consumption for human use has recently grown. It is easy to grow, it grows in semiarid areas (resistance to drought and heat) and some varieties have a high antioxidant capacity. It contains no gluten and thus would expand the limited list of ingredients for celiacs. In Argentina, sorghum flour (SF) is used in general consumer and gluten-free products. This is why it was of interest to study the composition and mineral content (Fe, Zn, Ca, Mg, Na and K) of white SF that are used in products for human consumption. Flour was processed in the semi-industrial plant of INTI Cereals and Oilseeds: wholemeal SF extruded and refined (90% extraction, raw and extruded). Proximate composition was determined through AOAC methods and minerals through atomic absorption spectrometry. The values obtained in wholemeal SF extruded, refined crude and extruded were (g%): moisture 11,0, 12,6 and 9,8; proteins: 10,2, 8,5 and 8,7; fats: 2,7, 2,6 and 1,5; dietary fiber: 13,3, 4,5 and 5,1; ash: 1,50 1,00 and 1,20; carbohydrates: 61,3, 70,8 and 73,7. Regarding minerals, the values found were (mg%): Fe: 5,9, 1,7 and 2,6; Zn: 2,5, 1,6 and 1,7; Ca: 19,1, 7,5 and 8,8; Mg: 140, 108 and 117; Na: 4,0, 1,1 and 3,6; K: 421, 243 and 305. Refining resulted in decreased dietary fiber and minerals. While Fe decreased in refined SF, acceptable levels were maintained and would provide Fe in gluten-free products. In refined SF, the Zn and Mg levels were appreciable, while Ca was very low as in all cereals. They were very poor in Na and rich in K content and would constitute a natural source of this mineral. In refined SF, extrusion did not affect the composition and mineral content.

El contenido de calcio (Ca) y de compuestos que afectan su absorción son relevantes en dietas ricas en harinas integrales y frutos secos, tanto en vegetarianos estrictos, individuos con intolerancia a lácteos, como en celíacos. Se determinaron Ca, fibra dietaria y perfil de inositoles fosfato (IP) en harinas integrales/refinadas y/o extrudidas de cereales (trigo, maíz, arroz, sorgo), pseudocereales (trigo sarraceno, amaranto), leguminosas (arveja), oleaginosas (soja, lino). Se cuantificó Ca por espectrometría de absorción atómica, fibra dietaria por método enzimático-gravimétrico y perfil de IP por HPLC. Mediante factores de conversión, se calculó el contenido de ácido fítico (AF) y la relación molar AF/Ca como indicador de su disponibilidad potencial. El Ca (mg/100 g) fue muy bajo en harinas de cereales (<20 trigo refinada, maíz integral, arroz integral, sorgo integral y refinada), en pseudocereales fue variable (4 trigo sarraceno, 115 amaranto) y fue superior en harinas de arveja, soja y lino (102-257) pero no aumentó en galletitas con agregado de estas últimas harinas. El contenido de fibra dietaria fue acorde al grado de extracción (1,4-13,3 g/100 g). En todos los casos la relación molar AF/Ca superó 0,17-0,24, valor límite que disminuiría la absorción del Ca.


Calcium (Ca) content and compounds that affect its absorption are relevant in wholemeal flours and tree nuts. These foods are specially recommended for vegetarians, people with intolerance to dairy products and celiac patients. Ca, dietary fibre and inositol profile (IP) where analyzed in wholemeal/refined/ extruded flours, in cereals (wheat, maize, rice, sorghum), pseudocereals (buckwheat, amaranth), leguminous (peas) and oilseeds (soy, flax). Ca was assessed by atomic absorption spectrometry, dietary fibre using an enzymatic method and IP profile by HPLC. Phytic acid content (AF) was obtained using conversion factors. Molar ratio AF/Ca was calculated as an index of potential Ca availability. Ca (mg/100 g) was very low in cereal flours (<20 in refined wheat, wholemeal maize and rice and refined and wholemeal sorghum). In pseudocereals, Ca varied (4 buckwheat, 115 amaranth). It was high in peas, soy and flax (102-257), but this was not enough to improve Ca in cookies made with these mix flours. Dietary fibre content was coincidental with the extraction grade (1.4-13.3/100 g). In all cases, AF/Ca molar ratios exceeded 0.17-0.24, limit value that represents the negative effect of AF over calcium availability.


O teor de cálcio (Ca) e de compostos que afetam sua absorção são relevantes em dietas ricas em farinhas integrais e frutos secos, tanto em vegetarianos rigorosos, indivíduos com intolerância a laticínios e quanto celíacos. Determinaram-se Ca, fibra alimentar e perfil inositol fosfato (IP) em farinhas integrais/refinadas e/ ou extruidas de cereais (trigo, milho, arroz, sorgo), pseudocereais (trigo sarraceno, amaranto), leguminosas (ervilha), oleaginosas (soja, linhaça). Quantificou-se Ca por espectrometría de absorção atômica, fibra alimentar pelo método enzimático-gravimétrico e perfil de IP por HPLC. A través de fatores de conversão foi calculado o conteúdo de ácido fítico (AF) e a relação molar AF/Ca como indicador de sua disponibilidade potencial. O Ca (mg/100 g) foi muito baixo em farinhas de cereais (<20 trigo refinada, milho integral, arroz integral, sorgo integral e refinada), em pseudocereais foi variável (4 trigo sarraceno, 115 amaranto) e foi superior em farinhas de ervilha, soja e linhaça (102-257), mas não aumentou em biscoitos com estas últimas farinhas adicionadas. O conteúdo de fibra alimentar foi conforme ao grau de extração (1,4-13,3 g/100 g). Em todos os casos a relação molar AF/Ca superou 0,17-0,24, valor limite que diminuiria a absorção do Ca.

El propósito de esta investigación fue determinar el contenido de algunos minerales, de ácido fítico y de γ-oryzanol en harinas integrales y salvados de tres cultivares (Cimarrón, Fonaiap 1 y Zeta 15) de arroz (Oryza sativa L) cosechados en Venezuela. Los minerales (Ca, Mg, Fe y Zn) fueron cuantificados por espectrofotometría de absorción atómica, mientras que el fósforo (P) y el ácido fítico fueron estimados a través de un método colorimétrico. El γ-oryzanol se cuantificó por HPLC. En general, el contenido de minerales fue mayor en la harina y en el salvado de la variedad Zeta 15. El contenido de P (400,0 ± 5,00 mg/100 g) y Mg (60,0 ± 0,00 mg/100 g) fue menor en la harina de la variedad Cimarrón, mientras que en los salvados de las distintas variedades se observaron valores significativamente altos de P (1860 ± 2,00 - 2185 ± 0,58 mg/100 g) y Ca (66,7 ± 1,15 ­ 73,3 ± 1,53 mg/100 g). Las tres variedades evaluadas representan importantes fuentes de ácido fítico y γ-oryzanol; sin embargo, la variedad Cimarrón fue la que exhibió las menores concentraciones de estos compuestos bioactivos. Basado en los resultados obtenidos, las harinas integrales y los salvados representan una fuente importante de minerales, de ácido fítico y de γ-oryzanol. La concentración de todos los microcomponentes es significativamente superior en los salvados con respecto a las harinas, lo que los convierte en una atractiva alternativa para la obtención de compuestos con actividad biológica de interés para la salud humana(AU)


The objective of this study was to determine the content of some minerals, phytic acid and γ-oryzanol in whole-grain flour and bran in three cultivars (Cimarrón, Fonaiap 1 y Zeta 15) of rice (Oryza sativa L) in Venezuela. The minerals were (Ca, Mg, Fe y Zn) quantified by Atomic Absorption Spectrophotometry while that the phosphorus (P) and phytic acid were determined using a colorimetric method. The γ-oryzanol was quantified by HPLC. In general, the mineral contents were higher in flour than bran in the cultivar Zeta 15. The P (400,0 ± 5,00 mg/100 g) and Mg (60,0 ± 0,00 mg/100 g) contents were lower in flour of the cultivar Cimarrón, while that were observed higher values of P (1860 ± 2,00 - 2185 ± 0,58 mg/100 g) and Ca (66,7 ± 1,15 ­ 73,3 ± 1,53 mg/100 g) in the bran of different cultivars. The three cultivars evaluated are an important source of phytic acid and γ-oryzanol; however, the Cimarrón cultivar exhibited the lowest concentrations of these bioactive compounds. Based on these results, whole-grain flours and brans may offer a good source of minerals, phytic acid and γ-oryzanol. The concentrations of all micro compounds evaluated were higher in the brans than the flours, this become the bran an attractive alternative to obtain compounds with biological activity of interest for human health(AU)

ABSTRACT

Due to the high foreign exchange spent on the importation of wheat and the need to combat issues of malnutrition in developing countries, cookies were produced from flour blends of fermented pigeon pea (FPF), germinated sorghum (GSF) and cocoyam (CF). Proximate composition of the cookies revealed that cookies made with 100%FPF had the highest protein content of 16.13% while cookies made with 100%CF had the least protein value of 6.40%. The antinutritional factors investigated in the cookies were low and within allowable limits. The nutritional quality evaluated by animal feeding experiments revealed that biological values (BV) of cookies ranged from 78.16% (for 100%CF) to 96.57% (for 33.3%FPF:33.3%GSF:33.3%CF); net protein utilization (NPU) values ranged from 70.08% (for 100%CF) to 92.98% (for 33.3%FPF:33.3%GSF:33.3%CF) while true digestibility (TD) ranged from 89.53%(for 100%CF) to 97.88% (for 66.6%FPF:16.7%GSF:16.7%CF). The results obtained suggest that cookies of good nutritional value can be produced from these locally available crops.

ABSTRACT

O objetivo deste trabalho foi avaliar o teor de ferro e zinco e a composição centesimal de farinhas de trigo e milho enriquecidas. Para a avaliação das concentrações de ferro e zinco, aplicou-se a técnica de Espectrometria de Absorção Atômica com Chama. Foram utilizados os métodos oficiais de análise para a determinação de umidade, cinzas, proteínas, carboidratos e lipídeos. Os dados obtidos foram comparados aos valores declarados nos rótulos dos produtos e às especificações recomendadas pela Legislação Brasileira. A concentração de ferro estava acima do especificado para a maioria das amostras. O teor de zinco variou entre 0,6 e 1,5 mg/100 g. Constatou-se que todas as farinhas avaliadas apresentaram características físico-químicas compatíveis com a Legislação. Já em relação ao rótulo dos produtos, verificou-se haver variação entre os valores obtidos e aqueles apresentados na embalagem, para algumas amostras. Os resultados obtidos no trabalho são de grande importância para o alcance dos objetivos da obrigatoriedade do enriquecimento de farinhas.


The aim of this work was to evaluate iron and zinc content and centesimal composition of enriched wheat and corn flours. For iron and zinc evaluation the Flame Atomic Absorption Spectrometry was applied. Official methods of analysis were used for moisture, ash, proteins, carbohydrates and lipids. The obtained data were compared with values in the label of products and the specification recommended by Brazilian Legislation. Iron content was higher than those for most of samples. The amount of zinc varied between 0.6 e 1.5 mg/100 g. The evaluated flours presented physical-chemistry characteristics according to Legislation. However, about products label was the variation between obtained and presented in package values, for some samples, was confirmed. The obtained results are very important to achieve the objectives of the mandatory enrichment of flours.

ABSTRACT

Foram analisadas 1.045 amostras de farinhas dos tipos trigo, mandioca, milho e fubá de milho, de março de 1980 a outubro de 1985, com a finalidade de verificar, através da pesquisa de sujidades pelo método de digestão com pancreatina, as condições higiênicas desses alimentos. Concluiu-se que 43% das amostras de farinha de trigo, 20/0 das de farinha de mandioca, 90/0 das de farinha de milho e 80/0 das de fubá de milho estavam em condições higiênicas insatisfatórias e 4% das de farinha de trigo, 120/0 das de farinha de mandioca, 50/0 das de farinha de milho e 30/0 das de fubá de milho estavam impróprias para o consumo, de acordo com critérios preestabelecidos de limite de tolerância de defeitos. Foi sugerida modificação no Código Alimentar Brasileiro, substituindo a exigência de ausência de sujidades para uma tolerância de até 10, quando se tratar de fragmentos de insetos (AU).
